Why the demo end at the start of the beach zone? If there are more scenes in the gallery, how can I continue?
Is there any way to just buy the game for 1 time payment cause I'm not going to get a monthly subscription for a game that is probably going to take forever to get completed.
You can cancel the subscription pretty easily after subscribing for the benefits and you have a whole month to do so. But if there are future updates for the game you will need to subscribe again to get the new version.

What system? The demo is free, the full version is paid. That's how it is for most games.
I don't mind paying for the game but it's a monthly subscription which I'm not gonna do the moment we're able to buy the game with a 1 time purchase I'll do it
dev here, the full game will be available on Steam for a one time purchase. Patreon is meant as a means to support development of the project, access to test builds, assist with direction the game moves in etc.
If you cannot support development, you can absolutely wait for the Steam release, we would encourage that!
But outside of the demo version, no, we don't see this going free at any point right now.
